We had a good week over here… I definitely can’t complain. Â I started to see some acupuncture patients at Belly Up Spa, we had our last official MOPS meeting of the year and we just had a relatively low stress week. Â I think the 100 Happy Days Challenge has got me going.
Welcome to the food edition of “top five Friday favorites.” Â I must be hungry or something because this is all food related!
Creamy Coconut Oatmeal. Â I’ve been sticking to pretty boring oatmeal lately, so I think it’s time to spice it up a little and try some new toppings and add-ins.
Freezer Meals Galore. Â I love having freezer meals around so that I don’t have to think about dinner every single day. Â I actually hate thinking about that. Â It’s a little more difficult to create freezer meals when I don’t eat dairy, gluten or eggs as most things are soups and casseroles with those things in them. Â This is a great list of freezer meals that are gluten and dairy free!Â
Crock Pot Apple Pie Oatmeal. Â A few years back, I was obsessed with making crock pot oatmeal. Â I also loved mixing it with Chobani greek yogurt, but that’s a side note because I can no longer do that thanks to my body hating dairy. Â I saw this recipe on Pinterest and it sparked my interest for making this again!
Banana Toast.Â I don’t know about you, but I am constantly looking for new ideas for toddler-approved meals. Â This is a super simple recipe that I think he would really like!
Sweet Potato Chips.Â I go through phases with sweet potatoes where I love them and then I just want real potatoes. Â Right now, I happen to love sweet potatoes and have been making lots of recipes with them. Â Aiden really loves them so that’s probably what spurred me to start liking them again. Â This recipe looks good andÂ much healthier than a bag of potato chips.

We have relatively no plans on the agenda for the weekend and I’m happy about it. Â I think there will be some running, hiking, cooking, cleaning and relaxing all while spending quality time with the family!
