Gluten-Free, Dairy-Free Toddler Approved Banana Muffins

I was perusing facebook yesterday and came across Fitnessista’s post on her grain free chocolate chip muffins.  I was interested and as I looked, I realized how simple they looked to make.

I immediately went into my kitchen and started modifying the recipe for the ingredients I had in my kitchen at the time.  It was an impromptu baking session, so going to the grocery store was not going to happen.

These are gluten-free, dairy-free and have no oils or extra sugar added.  After they are finished baking you can drizzle them with a little honey or agave if you desire extra sweetness.  Best of all – they are toddler, mama, and husband approved.  It’s an anomaly.


Gluten-Free, Dairy-Free Banana Muffins

Yields: 10 muffins


1 cup Gluten-Free Baking Mix (I used this one)

200 g. Applesauce Pouches (I used 2.5 of these)

1 Egg

1 Banana

1/2 tsp. Baking Powder

1/2 tsp. Cinnamon


Preheat the oven to 350 degrees.

Combine all ingredients.

Either with a food processor or mixer, mix in banana until the mixture is smooth.

Fill muffin tin and bake for 16-18 minutes.  I baked in altitude, so it might be less time for you.

Let cool.



This is the flour I used, but there are lots more on the market.
