Ever since I have stopped eating dairy, eggs, and most oats, wheat and gluten, I have dreamt of oatmeal. I’m actually good missing my evening on-occasion fro-yo because I sub in banana chips. Â David and I usually don’t even have bread in the house because he eats it way too fast (his words – not mine), so that’s okay too. Â I love veggies and salads and rice and potatoes, so I’m good there too! Â I am not good, however, in the morning. Â Ever since I was a little girl, I have LOVED breakfast foods… pancakes, french toast, english muffins, oatmeal, etc. Â I can still do some gluten-free pancakes, so that’s amazing, but I MISS MY OATMEAL! Â I am not supposed to have oats in general, so the gluten-free option isn’t going to cut it here either. Â I have been brainstorming other ideas and came up with quinoa.
Last night, I prepped some in the rice cooker and placed it in theÂ refrigerator. This morning, I heated it up a little bit, poured about 1/4 cup of almond milk in there, and added PB2, banana, and some agave nectar. Â When I went to eat it, it was okay.Â It was definitely not my oatmeal. Â The texture of quinoa as a substitution for oatmeal was sub-par in my opinion. Â Please let me know if you have any suggestions on how to make quinoa better or another substitution for oatmeal!
It really looks so promising! Â I’m bound and determined to figure this out. Â I have been eating brown rice krispies for the past week and while they’re delicious, they have NO staying power for me.
