As promised, here is a recipe that my mom and I made for a potluck at my school. Â I found them on Pinterest from this website. Â These peanut butter oatmeal bars are a light, healthy and delicious alternative to sugary granola bars. Â They contain no oil, dairy or butter. Â This recipe was very simple and contained many ingredients that most people have at their homes already.
First, combine the dry ingredients: oats, brown sugar, baking powder, salt, andÂ cinnamon.
Next, add the wet ingredients: mashed banana, vanilla extract, almond milk, egg, and peanut butter.
Then, bake them for 20 minutes at 350 degrees and voila!
Without further adieu, here is the recipe that we used:
Peanut Butter Oatmeal Bars
1 1/2 cups quick oats
1/4 cup packed light brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup almond milk (or any kind of milk desired)
1 large egg, lightly beaten
1 large mashed banana
1/4 cup creamy peanut butter
Mix together the oats, light brown sugar, baking powder, salt and ground cinnamon.
Add in the vanilla extract, milk and egg. Mix the ingredients together.
Then add in the mashed banana and peanut butter. Combine all of the ingredients.
Pour theÂ mixture into a lightly greased 8 by 8 inch baking pan. Bake at 350 degrees for 20 minutes.
I cut these into bite-sized pieces so there was more to go around!
