When I was home for Christmas, my mom turned me onto a very simple, yet very delicious way to make a healthy fried rice. Â We made it two times while I was home and I’ve made it a couple times since for David and I and we all approve, so here is the recipe! There isn’t exact ingredients for it; you tailor it how you like it!
Healthified Fried Rice
Prep Time: 15 minutes
Chopped veggies – broccoli, water chesnuts, onions, carrots, snap peas
Teriyaki or oyster sauce
Optional: Chicken or another type of meat
1. Â Cook the meat if you chose to add. Â In this recipe, I chose not to add any.
2. Â Cook the rice
3. Â Chop the vegetables if they aren’t already. Â I use my handy little food processor and chop them up in about 5 seconds flat.
4. Put the veggies in a pan with the cooked rice and scrambled egg and pour either your teriyaki or oyster sauce in. Â Stir-fry for a couple of minutes and voila, you’re ready to eat.
I garnished the dish with some cilantro which was a nice added bonus.
We ate this as a meal, but it would be good as a side dish too!
