Yesterday, I just wasn’t feeling it. I went for that run and felt great, but then my motivation kinda faltered until about 6 pm, when I did a little more homework. I love having Tuesdays off and being productive, but every now and then, I’m just exhausted from my school-filled weekends and 12 hour work-day Mondays and end up having lazy Tuesdays. Anyways, my husband couldn’t definitely sense this, so he made me take a nap and when I woke up, he had made black bean burgers, salad, and steamed veggies for dinner! It was a great surprise!
Black Bean Burgers
3 15-oz. black beans
1 1/2 eggs
1 Tbsp. garlic powder
1/4-1/2 c. bread crumbs
1/2 chopped onion
1 packet mild taco seasoning
Put the onions, cilantro, and seasonings in the food processor and then mash the rest of the ingredients together and form patties. He BBQed some of them and baked some of them for 10 minutes and he said that the baked patties held together better.
When David cooks, he just kinda throws ingredients in, so this recipe is what he thought he used, but if you make this, you probably need to evaluate a little more.
They were excellent I must say! Definitely a winner… we have left-overs, so you all know what I’ll be having for lunch tomorrow.
