Peanut Sauce Chicken

So first things first, my sister sent my mom and I a small (meaning 9 pictures) of the professional wedding pictures and this one caught my eye.

I mean they all were BEAUTIFUL, but I love this picture.  Isn’t it gorgeous?

Okay enough gushing about her fabulous wedding…

The other night, I was really in the mood for something with peanut sauce.  I’ve never really used it myself, but I love it in restaurants.  David and I decided to use potatoes, a variety of colors of bell peppers, onions, and chicken with the peanut sauce.

First I peeled the potatoes in preparation of boiling them.

I boiled the potatoes to make them soft (but not mushy) for about 35 minutes.

I baked the chicken breasts in the oven at 350 degrees for about 45 minutes as well.  I put them in a casserole dish wrapped in tin foil.

Once the potatoes are sufficiently soft,  cut them up to the desired “chunk” size.

Cut up potatoes

I cut up the bell peppers and onions in strips and then I stir fried the cut up chicken and veggies in the peanut sauce and then at the end I added the potatoes.

The finished product

David and I really liked this.  It’s an extremely random recipe, but sometimes those are the best.

What are other good recipes to make with peanut sauce?!
