So first things first, my sister sent my mom and I a small (meaning 9 pictures) of the professional wedding pictures and this one caught my eye.
Okay enough gushing about her fabulous wedding…
The other night, I was really in the mood for something with peanut sauce. Â I’ve never really used it myself, but I love it in restaurants. Â David and I decided to use potatoes, a variety of colors of bell peppers, onions,Â and chickenÂ with the peanut sauce.
First I peeled the potatoes in preparation of boiling them.
I boiled the potatoes to make them soft (but not mushy) for about 35 minutes.
I baked the chicken breasts in the oven at 350 degrees for about 45 minutes as well. Â I put them in a casserole dish wrapped in tin foil.
Once the potatoes are sufficiently soft, Â cut them up to the desired “chunk” size.
I cut up the bell peppers and onions in strips and then I stir fried the cut up chicken and veggies in the peanut sauce and then at the end I added the potatoes.
David and I really liked this. Â It’s an extremely random recipe, but sometimes those are the best.
