I’m a huge fan of enchiladas but we all know that they are greasy, fat and calorie-laden, so they must be enjoyed only in moderation. Â I am here to tell you I have the answer for this problem. Â They nix the fat and grease without the flavor. Â I introduce to you healthy enchiladas and they are EXTREMELY fast and easy. Â I use green chile non-fat refried beans, black beans, corn, green onions, whole wheat tortillas and of course, enchilada sauce.
First, combine the green chile non-fat refried beans, corn, black beans, and chopped green onions into a stir-fry pan and heat them. Â I add a tiny bit of enchilada sauce so it mixes better.
Pre-heat the oven to 350 degrees and cook them for 15 minutes and they are ready to go. Â They also work really well as left-overs and taste the same re-heated. Â I like to make lots of them and freeze them, so there is always something on hand for lunch. Â I guess we all know what David and I are eating for lunch the next few days.
