I have good news!! I took my Microbiology final yesterday afternoon (and passed), so I never have to think about that subject again!! Not that learning about viruses and bacteria isn’t interesting or anything, but the actual lab procedures were a tad on the boring side for me! In order to bribe myself into studying more, I went to Paradise Bakery and ordered their steel cut oats with strawberries and cinnamon in it. It was perfect for some brain food (literally)!
After David and I worked out via Insanity, we were ready for some din din. When we were at Costco a couple of days ago, we got a REALLY big bag of cabbage salad mix and mini cucumbers. I made my mom’s typical cabbage salad and then David stir-fried the cucumbers and chicken breast in Veri-Veri Teriyaki. We went a little crazy and just went ahead and combined the cabbage salad and stir-fry and ended up with this lil’ gem!
4 chopped green onions
Toast 1 pkg. ramen noodles (chicken flavor) crushed
1/4 c. sesame seeds
1-2 c. slivered almonds
1 T. soy sauce
1/4 c. red wine vinegar
1/4 tsp. pepper
1/2 c. oil
1/2 c. sugar
Toss cabbage, dressing and noodle ingredients at least 1 hour before serving. David likes it the best after sitting overnight. The dressing soaks in much more!! I think it’s good no matter when it’s eaten!
After making this recipe, we just threw in the teriyaki chicken and cucumbers and it only added flavor…in a good way:)
Off to prepare for my 12 hour work day…
